When Tommy Marshall and Evan Greco took over Blue Max Meats last April – a longstanding business in the community – they had a goal to place their own mark on the operation to truly make it their own. But it wasn’t until Greco, on his honeymoon in Long Beach, came across an antique, framed photograph of a traditional meat market that inspiration truly hit.
“He kept saying there is a business to be had in a traditional, old fashioned meat market focused on service,” Marshall said. “And I started thinking about it. It kept me up at night, and I quickly realized that we needed to do what it takes to make this happen.”
During a discussion about how to develop the business, they received a phone call from the prior owner of Blue Max Meats, expressing his interest in selling the business.
All the pieces fell into place quite easily -- and the photograph that provided the inspiration for Blue Max still hangs on the wall for all to see.
Marshall credits both their families for helping spruce up the shop, to create a truly comfortable and inviting environment. “Our families volunteered so much of their time to help us open the shop,” he said. “There was an unbelievable amount of work to be done.”
But the hard work paid off, if the long list of loyal customers means anything at all. Many appreciate the ability to understand exactly where the meat is coming from. All the sausage, jerky, pepperoni and more are prepared in-house, minimizing the preservatives found in many grocery store brands.
The shop is especially known for its sausages and hand cut jerky, which make the perfect gift for the carnivores in your life. The store is also full of stocking stuffers from local small businesses, such as barbecue spices and rubs, coffee beans, the infamous Cougar Gold cheese and more. A full line of exotic meats are available as well, ranging from alligator and frog legs to quail, elk and bison. Gift cards are available for the holidays.
